Lemony Chicken Breast Turkey Ham Salad
This batch was made from toasted turkey ham chops, roasted chicken breast, arugula, Boston lettuce, small diced cherry tomatoes, fresh lemon juice, Kosher salt, white wine vinegar, a touch of traditional Dijon mustard and hint of anchovy paste diluted with few drops of unsweetened runny soy sauce.
Lemon juice mostly took the charge of the dressing, on that, a combination of unsweetened runny soy sauce and anchovy paste for a kick. This is not typical winter food, great for a refreshing breakfast though.
If you have a thing for chicken breast, you should give it a shot.
Just as you know, it might be better to cut the chicken by snipping, rather than slicing. Good for this dressing as there is no mayo. Overall, it will work well. It’s likely you could keep it refreshing, besides you can get a dish the dressing came through.
This was yet healthier Caesar salad kind of stuff. Even though there is no mayo or croutons, not even cheese, but that took the featured role in the first place. You know, it’s too strong major of staples.
Arugula had a really big role in the whole dish.
